The Chemex Pour-Over (A true classic)

We wanted to share a little tidbit on our giveaway for the week and it just happens to be one of our favorite ways the make coffee.

Arguably the most classic piece of brewing equipment still available today, the Chemex is a glass brew cone/decanter. Available in 3, 6, 8, and 10 cup sizes, typically detailed with either a sleek glass handle or a light colored wooden collar the Chemex does well at giving you enough variety without getting in the way of the simplicity that has made this a very popular brewer for three-quarters of a century.

It is recommended that you use a Medium to medium-coarse ground bean for most brews but as with all coffee it’s the drinkers choice.

How do you use it?

1. Insert your Chemex filter into the cone and rinse thoroughly with hot water (be sure to dump the rinse water).
2. Add your coffee (usually 1 scoop per 8 ounces of water but again, your choice).
3. Start a timer, and pour about 10-15% of your brew water evenly over the grounds.
4. After 30 seconds, begin adding the rest of your water to the brewer in small increments; keep a slow and even pour.
5. Continue pouring water in pulses until reaching your brew; allow all of the water to finish flowing through the coffee bed before discarding your filter.

Total brew time should be 4–5 minutes max for most brews in your 6, 8, or 10 cup Chemex.

The Chemex brews the lightest bodied and cleanest cup of coffee of any paper filtered brew system out there. The slow flow rate and longer contact time helps to easily facilitate a good extraction, which in turn helps to showcase the full spectrum of flavors that a particular coffee has. However, because of this longer contact time and lighter brew the Chemex will always lack “body” compared to other brewers—if you’re looking for a full and rich tactile experience then this brewer isn’t for you.
